- 2 tablespoons olive oil
- juice of 1/2 a lemon
- 1 teaspoon chopped garlic
- 1 teaspoon coriander or cumin
- dash of salt and pepper
- 2 pounds bonus skinless chicken breast, cut into cubes
- In a large bowl mix all ingredients together except the chicken. Once mixed add the chicken and stir to coat all sides.
- Skewer up your chicken and grill them on the BBQ until done.
This chicken has a very mellow taste. I recommend pairing it with a seasoned rice or atop a green salad.
