Broke as a Joke Recipes

Here are a few recipes I used from the Broke as a Joke challenge I’m doing.

Crock pot BBQ Chicken Breast

  • 4 bone in skinless chicken breast
  • 1 1/2 -2 cups of your favorite BBQ sauce
  1. Place the chicken in the crock pot bone down.
  2. Smother the chicken in the BBQ sauce.
  3. Cook on low for 21/2 hrs.

Serve with a couple sides. I like corn on the cob and green beans.

Shredded BBQ chicken sandwiches

  • Left over chicken from Crock pot BBQ Chicken Breast.
  • BBQ sauce to taste
  • Buns
  1. Shred the chicken with a fork and put it in a oven safe bowl with lid. I use Corning Ware for this.
  2. Add BBQ sauce to taste and mix it together. I like to add a lot.
  3. Set your oven to the lowest temperature “warming” temperature cover your chicken and put it in the oven till warmed and ready to serve.
  4. Put the chicken on buns.
  5. Add more BBQ sauce or cheese to make it even better.

Leftover fresh veggie mix up.

We like to eat Veggies at every dinner but we always end up with fresh veggies in the fridge that end up going bad. This idea was given to me by my good friend Amber.

  • Whatever fresh veggies you have that sound yummy cooked and mixed up.
    • Green beans
    • Broccoli
    • Asparagus
    • zucini
    • squash
    • onion must have
    • julienne carrots
    • frozen peas
    • cauliflower
    • sweet potato
    • brussel sprouts
    • sugar snap peas
    • etc.
  • Tbl Spoon coconut oil
  • Salt and pepper to taste
  • Optional Rice I use left over rice or frozen rice
  • Optional I like to add apple sausage from Trader Joe’s
  1. If your using a veggie that takes a bit longer to cook (Green beans, broccoli, cauliflower) I recommend you boil it in an inch of water first to soften it up a bit in your saute’ pan. If not then move on to step 2.
  2. On medium heat, heat your coconut oil.
  3. Saute’ your onions for about 2-3 minutes
  4. Add any and all other ingredients, as much or as little as you want and saute until all is heated and cooked to your liking. I like to keep my veggies somewhat crisp.

Leftover Smoothie

I always find myself throwing away fruit, I either buy way to much or I forget to eat it. When I notice the fruit is on the brink of getting bad but still edible I measure it out and freeze it. Bananas, grapes, berries, stone fruits, pineapple, mango, etc. Oh yeah, and veggies that you can freeze like spinach, kale, and carrots these work for smoothies. They should last you 6 months int he freezer. I recommend using frozen fruit and veggies in the smoothies it makes them colder and you don’t have to add ice.

note to self… Peel the bananas before you freeze them. Its funny watching someone peel a frozen banana.

Here’s a few recipes I have made with my leftover frozen fruits and veggies.

Holden’s Choice

  • 1 cup frozen or not green grapes
  • 1 banana frozen or not
  • 1 cup vanilla soy milk
  • 1/2 cup frozen or not spinach
  • 1/2 cup water or coconut water

Pineapplicous

  • 1 cup frozen or not pineapple
  • 1 banana frozen or not
  • 2 cups vanilla coconut milk
  • 1 Tbl spoon of dried coconut flakes
  • 1 cup frozen or not spinach

Peaches and V

  • 1 cup frozen or not peaches
  • 2 cups almond milk
  • 1/2 teaspoon vanilla extract
  • 1 cup frozen or not kale
  • 1 banana frozen or not
  • 1 cup frozen or not green grapes

Carrots???

  • 2 large carrots not frozen
  • 1 cup frozen or not spinach
  • 1 cup frozen or not pineapple
  • 1 cup frozen or not mango
  • 2 cups water
